The castle faces west. The harbor faces west. The terrace at Jolly Roger’s faces west. At some point around 6 PM, everything clicks — the light goes orange over the water, the cruise ships start moving, and St. Thomas looks exactly like the postcard version of itself.
It’s the best thing on the property that nobody plans for. Most visitors come up to see the tower, spend an hour, and head back down before it happens. This is a note in favor of staying.
The setup
Jolly Roger’s sits on the upper terrace at Blackbeard’s Castle, just off the pool deck. The bar opens at 9 AM and runs until 9 PM. It handles lunch well — fish tacos, rum cocktails, the kind of thing that’s easy to stretch into an afternoon — but it’s the evening crowd that gets the light right.
What to order
The Peg Leg Punch is the house drink and it earns the name. The local rum selection is serious — Blackbeard’s Castle Rum is made on-island and worth a tasting if you haven’t tried it. There’s a full food menu but the bar menu is enough if you’re there for the view.
The timing
Golden hour in St. Thomas runs roughly 5:30 to 7 PM depending on the season. The light hits the harbor maybe 20 minutes before sunset and lasts another 10 after. Get there before 5:30 if you want a seat on the terrace. After sunset, the harbor lights come up and it’s a different kind of beautiful.
